Our Brewing Style and Philosophy

With so many breweries and craft beers available these days, we strive to do things a bit differently. Very few micro and nano breweries brew lagers as they require refrigeration and take a bit more time to mature and they are harder to hide flaws in the beers. We learned early on that we had the patience and talent to do really good and refreshing lagers from our Pilsner, Mexican Lager, Helles, Oktoberfest, and Munich Dunkel. We like to experiment with different hop combinations to give you a crisp, clean beer.

Our ales range from the traditional English pub fare like stouts and porters as well as early Colonial-style beers our forefathers brought the recipes from the old country.

Currently Brewing:

• Luchador Lager - Traditional Mexican style pale lager brewed with German noble hops, crisp, clean, refreshing 5.4% ABV 15 IBU

• Munich Dunkel - traditional Munich Dunkel amber/brown lager 5.3% ABV 20 IBU

• Rayado Red - Traditional Irish red, easy drinking! 5.4 ABV 20 IBU

• Hatch Chile Amber - A rich amber ale infused with just the right amount of Hatch green chiles for that earthy slight heat on the back of the palate. The amber base gives a slight sweetness and rich full body that balances very well with the chiles 5.5% ABV 20 IBU

• That Other IPA - A relatively mellow IPA at 55 IBU. Notes of citrus, 7.4% ABV 55 IBU

• Dream Sickle IPA- A milkshake IPA, we brew this with copious amounts of juicy hops and orange peel, then we age it on organic vanilla. It’s creamy, lightly bitter, and the flavors meld well. It’s an amazing beer! 6.1% ABV 42 IBU

• Koehler Kölsch - A traditional bier recipe from the Köln or Cologne region of Germany. This unique yeast strain gives the beer a fruity to neutral presence on the tongue. We use a later German hop variety which gives this brew a slightly spicy hop note. 5.5% ABV 15 IBU.

• Ponil Pilsner - Named for the Ponil Creek which you cross as you enter Cimarron from the north. It’s also the area where Philmont’s headquarters was originally when it was given to the BSA by Oklahoma oil man Waite Phillips. The Phillips also had a home in Tulsa, Oklahoma our owner and brewmaster’s hometown. Brewed with Czech hops from the Czech Republic. It’s a light, crisp drink with noting but quality Pilsen grain in the grain bill. 5% ABV 20 IBU.

• Biscochito Stout - Named for our famous state cookie. This ale is brewed with cinnamon, orange peel, and a light dose of star anise just like the cookies. I very nice, rich ale good for a relaxing brew or dessert. 6.1% ABV, 10 IBU.
